50% Chenin - 50% Ugni Blanc.
Soft pressing, cold maceration, and alcoholic fermentation at controlled temperature (15 °C). It is stabilized in stainless steel tanks. Once the base wine is obtained, it is racked into a pressurized tank; it is inoculated with selected yeasts and tirage liquor is added. This second period will last 30 days and, once the wine achieves 5 atmospheres of pressure, it is filtered and bottled.
This is a young, fresh and fruity sparkling wine, having a pale yellow color with greenish hues. In nose, it offers white flower aromas such as jasmine, notes of peaches, bananas and an interesting fresh scent. In mouth, it is well balanced and mildly acid, a remembrance of green apples.
